Highland Beef Creton with Maple Syrup

Serves 6 peoples


Ingredients

  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 1/2 white onion, chopped
  • 1 clove of garlic, minced
  • 1 slice of bacon, finely chopped
  • 1 pound  Highland ground beef 
  • ½ pound lean ground pork
  • 80 ml (1/3 cup) chicken broth
  • 80 ml (1/3 cup) maple syrup
  • 1 tablespoon of Dijon mustard
  • 2 ½ tablespoons of oatmeal
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • Salt and pepper, to taste


Preparation

In a saucepan, over medium-high heat, melt the butter and oil until frothy. Add the onion and fry for a minute, stirring. Add garlic and bacon and stir for another minute. Add the minced beef and pork and continue to stir for them to fork tender. Add all other ingredients and simmer over medium-low heat for 30 minutes, until the broth is absorbed.

Remove from heat and mold in small dishes. Cool.
