INGREDIENTS
- red or white onion
- seasoned rice vinegar
- 1 pound Highland ground beef
- 2 cloves garlic, minced
- 3 green onions, sliced thinly
- 1 small jalapeno pepper, sliced thinly
- salt & pepper
- 2 tbsp soy sauce
- 1 1/2 tsp fish sauce (we know it smells vile, but makes things taste delish)
- 1 tbsp brown sugar
- 1 tsp sriracha sauce (or more to taste)
- lettuce leaves (bibb or romaine, but good old iceberg does in a pinch)
- cooked rice (cold leftovers is just fine)
- snap peas, sliced
- fresh mint leaves
Preparation
Make a quick pickled onion by thinly slicing a white or red onion into a bowl and covering with seasoned rice vinegar. Don't skip this step - it brings the dish all together.
Brown ground beef in a skillet. Season with salt & pepper.
Add garlic, green onion and jalapeno and cook until soft. Add soy sauce, fish sauce, brown sugar & sriracha sauce. Stir and simmer a few minutes.
Serve on beds of lettuce leaves & cooked rice. Garnish with sliced snap peas (or other thinly sliced raw vegetable), picked onions and fresh mint leaves.
